Empanadas De Mariscos (seafood Empanadas)

Ingredients

  • 1 lb mixed seafood (shrimp, scallops, and fish), chopped
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1/4 cup cilantro, chopped
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 12 empanada discs (store-bought or homemade)
  • Oil for frying

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.
  2. Add the mixed seafood to the skillet and cook until it's no longer translucent.
  3. Stir in the tomato, cilantro, cumin, paprika, salt, and pepper. Cook for a few more minutes, then remove from heat and let the mixture cool.
  4. Place a spoonful of the seafood mixture onto each empanada disc. Fold the dough over the filling and seal the edges by pressing with a fork.
  5. Heat oil in a deep skillet over medium-high heat. Fry the empanadas until golden brown on both sides.
  6. Remove from the oil and place on a paper towel to drain excess oil. Serve hot and enjoy!
