Empanadas De Mariscos (seafood Empanadas)
Empanadas de Mariscos, or Seafood Empanadas, are a popular dish in Panamanian cuisine. These delicious turnovers are filled with a savory mixture of seafood and spices, then fried to golden perfection.
Ingredients
- 1 lb mixed seafood (shrimp, scallops, and fish), chopped
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 1/4 cup cilantro, chopped
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 12 empanada discs (store-bought or homemade)
- Oil for frying
Instructions
- In a large skillet, heat some oil over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.
- Add the mixed seafood to the skillet and cook until it's no longer translucent.
- Stir in the tomato, cilantro, cumin, paprika, salt, and pepper. Cook for a few more minutes, then remove from heat and let the mixture cool.
- Place a spoonful of the seafood mixture onto each empanada disc. Fold the dough over the filling and seal the edges by pressing with a fork.
- Heat oil in a deep skillet over medium-high heat. Fry the empanadas until golden brown on both sides.
- Remove from the oil and place on a paper towel to drain excess oil. Serve hot and enjoy!
