Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs, diced
  • 2 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 2 sheets of store-bought puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the diced chicken thighs to the skillet and cook until they are no longer pink.
  3. Stir in the diced potatoes, ground turmeric, ground coriander, ground cumin, and chili powder. Cook for a few minutes until the potatoes are slightly tender.
  4. Pour in the coconut milk and season with salt and pepper. Simmer for 10-15 minutes until the chicken and potatoes are fully cooked and the mixture has thickened. Remove from heat and let it cool.
  5. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  6. Roll out the thawed puff pastry sheets and cut each sheet into 6 equal squares.
  7. Place a spoonful of the chicken and potato mixture in the center of each pastry square. Fold the pastry over the filling to create a triangle and crimp the edges with a fork to seal.
  8. Brush the empanadas with the beaten egg wash and place them on the prepared baking sheet.
  9. Bake for 20-25 minutes or until the empanadas are golden brown and crispy.
  10. Remove from the oven and let them cool slightly before serving.
