Empanadas De Pollo Indonesias (indonesian Chicken Curry Puffs)
Empanadas de Pollo Indonesias, also known as Indonesian Chicken Curry Puffs, are a delicious and savory snack that originated from the Odesite cuisine. These crispy and flaky pastries are filled with a flavorful mixture of chicken, potatoes, and aromatic Indonesian spices.
Ingredients
- 1 lb (450g) boneless, skinless chicken thighs, diced
- 2 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 cup coconut milk
- Salt and pepper to taste
- 2 sheets of store-bought puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- In a large skillet, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the diced chicken thighs to the skillet and cook until they are no longer pink.
- Stir in the diced potatoes, ground turmeric, ground coriander, ground cumin, and chili powder. Cook for a few minutes until the potatoes are slightly tender.
- Pour in the coconut milk and season with salt and pepper. Simmer for 10-15 minutes until the chicken and potatoes are fully cooked and the mixture has thickened. Remove from heat and let it cool.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry sheets and cut each sheet into 6 equal squares.
- Place a spoonful of the chicken and potato mixture in the center of each pastry square. Fold the pastry over the filling to create a triangle and crimp the edges with a fork to seal.
- Brush the empanadas with the beaten egg wash and place them on the prepared baking sheet.
- Bake for 20-25 minutes or until the empanadas are golden brown and crispy.
- Remove from the oven and let them cool slightly before serving.
