Empanadas Ecuatorianas (ecuadorian Empanadas)
Empanadas Ecuatorianas, or Ecuadorian Empanadas, are a popular savory snack in Ecuador. These delicious turnovers are made with a flavorful filling and a crispy, golden-brown crust. They are perfect for a quick meal or as a party appetizer.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/2 cup water
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground beef or pork
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 hard-boiled eggs, sliced
- 1/2 cup pitted green olives, sliced
Instructions
- In a large bowl, mix the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add the water and knead the dough until smooth. Cover and let it rest for 30 minutes.
- Heat the vegetable oil in a skillet over medium heat. Add the onion and garlic, and cook until softened.
- Add the ground meat, cumin, paprika, salt, and pepper. Cook until the meat is browned. Remove from heat and let it cool.
- Preheat the oven to 375°F (190°C).
- Divide the dough into 12 equal portions. Roll each portion into a 6-inch circle on a floured surface.
- Place a spoonful of the meat mixture in the center of each dough circle. Add a slice of hard-boiled egg and a few olive slices.
- Moisten the edges of the dough with water, fold it in half, and crimp the edges with a fork to seal.
- Place the empanadas on a baking sheet and bake for 20-25 minutes, or until golden brown.
- Serve the empanadas hot and enjoy!
