Empanadas Gallegas (galician Empanadas)
Empanadas Gallegas, or Galician Empanadas, are a traditional savory pie from the Galicia region of Spain. These delicious hand pies are filled with a variety of ingredients and are perfect for a snack or a light meal.
Ingredients
- 500g all-purpose flour
- 200ml water
- 200ml olive oil
- 1 teaspoon salt
- 500g ground beef
- 2 onions, chopped
- 2 red bell peppers, diced
- 2 hard-boiled eggs, sliced
- 1 teaspoon sweet paprika
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour, water, olive oil, and salt to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 30 minutes.
- In a skillet, cook the ground beef, onions, and bell peppers until the meat is browned and the vegetables are soft. Season with paprika, salt, and pepper.
- Preheat the oven to 375°F (190°C).
- Divide the dough into 6 equal portions. Roll out each portion into a thin circle.
- Place a portion of the filling on one half of each dough circle, leaving a border around the edge. Top the filling with slices of hard-boiled egg.
- Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, then crimp with a fork.
- Place the empanadas on a baking sheet and bake for 25-30 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
