Empanadas Gallegas (galician Empanadas)

Ingredients

  • 500g all-purpose flour
  • 200ml water
  • 200ml olive oil
  • 1 teaspoon salt
  • 500g ground beef
  • 2 onions, chopped
  • 2 red bell peppers, diced
  • 2 hard-boiled eggs, sliced
  • 1 teaspoon sweet paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour, water, olive oil, and salt to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 30 minutes.
  2. In a skillet, cook the ground beef, onions, and bell peppers until the meat is browned and the vegetables are soft. Season with paprika, salt, and pepper.
  3. Preheat the oven to 375°F (190°C).
  4. Divide the dough into 6 equal portions. Roll out each portion into a thin circle.
  5. Place a portion of the filling on one half of each dough circle, leaving a border around the edge. Top the filling with slices of hard-boiled egg.
  6. Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, then crimp with a fork.
  7. Place the empanadas on a baking sheet and bake for 25-30 minutes, or until golden brown.
  8. Remove from the oven and let cool slightly before serving.
