Empanadas Uruguayas, or Uruguayan Empanadas, are a popular dish in Uruguayan cuisine. These savory pastries are filled with a delicious mixture of meat, onions, olives, and hard-boiled eggs, and are perfect for a hearty meal or a snack.
Ingredients
- 1 lb ground beef
- 2 onions, finely chopped
- 1/2 cup green olives, pitted and chopped
- 3 hard-boiled eggs, chopped
- 1/2 tsp paprika
- Salt and pepper to taste
- 12 empanada discs (store-bought or homemade)
Instructions
- In a large skillet, cook the ground beef and onions over medium heat until the beef is browned and the onions are soft.
- Add the chopped olives, hard-boiled eggs, paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 5 minutes. Remove from heat and let the filling cool.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Place a spoonful of the meat filling in the center of each empanada disc. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
- Place the empanadas on the prepared baking sheet and brush the tops with beaten egg for a golden finish.
- Bake for 20-25 minutes, or until the empanadas are golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
