Ingredients

  • 1 lb ground beef
  • 2 onions, finely chopped
  • 1/2 cup green olives, pitted and chopped
  • 3 hard-boiled eggs, chopped
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 12 empanada discs (store-bought or homemade)

Instructions

  1. In a large skillet, cook the ground beef and onions over medium heat until the beef is browned and the onions are soft.
  2. Add the chopped olives, hard-boiled eggs, paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 5 minutes. Remove from heat and let the filling cool.
  3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Place a spoonful of the meat filling in the center of each empanada disc. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
  5. Place the empanadas on the prepared baking sheet and brush the tops with beaten egg for a golden finish.
  6. Bake for 20-25 minutes, or until the empanadas are golden brown and crispy.
  7. Remove from the oven and let cool for a few minutes before serving.
