Ingredients

  • 12 egg roll wrappers
  • 2 cups shredded cabbage
  • 1 cup julienned carrots
  • 1 cup bean sprouts
  • 1/2 cup chopped green onions
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Oil for frying

Instructions

  1. In a small bowl, mix soy sauce, garlic, and ginger. Set aside.
  2. In another bowl, dissolve cornstarch in water. Set aside.
  3. In a wok or large skillet, heat oil over medium heat. Add cabbage, carrots, bean sprouts, and green onions. Stir-fry for 2-3 minutes.
  4. Pour the soy sauce mixture over the vegetables and stir well. Cook for another 2 minutes.
  5. Add the cornstarch mixture and cook until the sauce thickens. Remove from heat and let the filling cool.
  6. Place a spoonful of the filling onto each egg roll wrapper. Fold the sides over the filling and roll tightly.
  7. Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the egg rolls in batches until golden brown, about 3-4 minutes per batch. Drain on paper towels.
