Ingredients
- 2 lbs fresh tuna, cut into chunks
- 4 ripe tomatoes, diced

- 2 cups water
- 1 cup orange juice
- 1 cup lime juice
- 2 tbsp ground cumin
- Salt and pepper to taste

- 2 ripe avocados, sliced
- Hot sauce for serving
Instructions
- In a large pot, combine the tuna, tomatoes, onions, bell pepper, cilantro, fish or vegetable broth, water, orange juice, lime juice, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour.
- Divide the cooked rice into serving bowls and ladle the hot encebollado over the rice.
- Top each bowl with avocado slices and serve with hot sauce on the side.
