Encebollado Explosion (Explosión de Encebollado)

Ingredients

  • 2 lbs fresh tuna, cut into chunks
  • 4 ripe tomatoes, diced

  • 1 green bell pepper, diced
  • 1 bunch cilantro, chopped
  • 4 cups fish or vegetable broth
  • 2 cups water
  • 1 cup orange juice
  • 1 cup lime juice
  • 2 tbsp ground cumin
  • Salt and pepper to taste
  • 4 cups cooked white rice
  • 2 ripe avocados, sliced
  • Hot sauce for serving

Instructions

  1. In a large pot, combine the tuna, tomatoes, onions, bell pepper, cilantro, fish or vegetable broth, water, orange juice, lime juice, cumin, salt, and pepper.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour.
  3. Divide the cooked rice into serving bowls and ladle the hot encebollado over the rice.
  4. Top each bowl with avocado slices and serve with hot sauce on the side.
