Ingredients

  • 1 cup Arborio rice
  • 2 shallots, finely chopped
  • 1/2 cup white wine
  • 4 cups vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the vegetable broth over low heat.
  2. In a separate large skillet, melt 1 tablespoon of butter over medium heat.
  3. Add the shallots and sauté until translucent.
  4. Add the Arborio rice and stir to coat with the butter, cooking for 2 minutes.
  5. Pour in the white wine and cook until the liquid is absorbed.
  6. Gradually add the warm vegetable broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more.
  7. Continue this process until the rice is creamy and al dente, about 20 minutes.
  8. Stir in the remaining butter and Parmesan cheese, season with salt and pepper, and remove from heat.
  9. Let the risotto rest for a few minutes before serving.
