Ingredients
- 1 cup Arborio rice
- 2 shallots, finely chopped
- 1/2 cup white wine
- 4 cups vegetable broth
- 1/2 cup grated Parmesan cheese

Instructions
- In a saucepan, heat the vegetable broth over low heat.
- In a separate large skillet, melt 1 tablespoon of butter over medium heat.

- Continue this process until the rice is creamy and al dente, about 20 minutes.
- Stir in the remaining butter and Parmesan cheese, season with salt and pepper, and remove from heat.
- Let the risotto rest for a few minutes before serving.
