Ingredients
- 2 cups shredded cooked chicken
- 1 cup diced onion
- 1 cup diced bell pepper
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 12 corn tortillas
- 2 cups tomato sauce
- 1 cup shredded cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a skillet, sauté the onion and bell pepper until softened.
- Add the shredded chicken, cumin, chili powder, garlic powder, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Warm the corn tortillas in a separate skillet or in the microwave.
- Place a spoonful of the chicken mixture in the center of each tortilla and roll it up. Place the rolled tortillas seam-side down in a baking dish.
- Pour the tomato sauce over the rolled tortillas and sprinkle the shredded cheese on top.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly.
- Sprinkle with chopped cilantro before serving.
