Enchiladas De Pollo (honduran Chicken Enchiladas)

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 12 corn tortillas
  • 2 cups tomato sauce
  • 1 cup shredded cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a skillet, sauté the onion and bell pepper until softened.
  2. Add the shredded chicken, cumin, chili powder, garlic powder, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  3. Warm the corn tortillas in a separate skillet or in the microwave.
  4. Place a spoonful of the chicken mixture in the center of each tortilla and roll it up. Place the rolled tortillas seam-side down in a baking dish.
  5. Pour the tomato sauce over the rolled tortillas and sprinkle the shredded cheese on top.
  6. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Sprinkle with chopped cilantro before serving.
