Ingredients
- 2 lbs stewing beef, cubed
- 2 onions, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 1 cup ale
- 1 cup beef stock
- 2 bay leaves
- Salt and pepper to taste
- 2 sheets of puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, brown the beef in batches. Remove and set aside.
- Add the onions, carrots, celery, and garlic to the pot. Cook until softened.
- Stir in the flour and cook for 1 minute.
- Pour in the ale and beef stock, and add the bay leaves. Bring to a simmer.
- Return the beef to the pot. Season with salt and pepper. Cover and transfer to the oven. Cook for 1.5 hours.
- Remove the pot from the oven and increase the temperature to 400°F (200°C).
- Transfer the beef mixture to a pie dish. Cover with puff pastry, brush with egg wash, and make a few slits on top.
- Bake for 25-30 minutes, or until the pastry is golden brown.
