Ingredients

  • 2 lbs stewing beef, cubed
  • 2 onions, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1 cup ale
  • 1 cup beef stock
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 sheets of puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, brown the beef in batches. Remove and set aside.
  3. Add the onions, carrots, celery, and garlic to the pot. Cook until softened.
  4. Stir in the flour and cook for 1 minute.
  5. Pour in the ale and beef stock, and add the bay leaves. Bring to a simmer.
  6. Return the beef to the pot. Season with salt and pepper. Cover and transfer to the oven. Cook for 1.5 hours.
  7. Remove the pot from the oven and increase the temperature to 400°F (200°C).
  8. Transfer the beef mixture to a pie dish. Cover with puff pastry, brush with egg wash, and make a few slits on top.
  9. Bake for 25-30 minutes, or until the pastry is golden brown.
