Enlightened Eggplant Curry (觉醒茄子咖喱)

Ingredients

  • 2 large eggplants, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cups cooked rice, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the eggplant and sauté for 5 minutes.
  4. Stir in the curry powder, turmeric, cumin, paprika, salt, and black pepper.
  5. Pour in the coconut milk and bring to a simmer. Cook for 15-20 minutes, or until the eggplant is tender.
  6. Serve the curry over cooked rice.
