Enlightened Eggplant Curry (觉醒茄子咖喱)
This Enlightened Eggplant Curry is a delicious and healthy Taoist Diet recipe that will awaken your taste buds and nourish your body and soul.
Ingredients
- 2 large eggplants, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 2 cups cooked rice, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the eggplant and sauté for 5 minutes.
- Stir in the curry powder, turmeric, cumin, paprika, salt, and black pepper.
- Pour in the coconut milk and bring to a simmer. Cook for 15-20 minutes, or until the eggplant is tender.
- Serve the curry over cooked rice.
