Enlightened Eggplant Roll-Ups (觉醒茄子卷)

Ingredients

  • 2 large eggplants, thinly sliced lengthwise
  • 1 block firm tofu, drained and sliced into strips
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat the stovetop grill or a grill pan over medium heat.
  2. Brush the eggplant slices with a little oil and grill for 2-3 minutes on each side until tender. Remove from heat and set aside.
  3. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger, and garlic.
