Ingredients
- 2 medium eggplants, cut into cubes
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Prepare the sauce by mixing soy sauce, rice vinegar, sesame oil, and cornstarch in a bowl. Set aside.
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add garlic and ginger, and stir-fry for 1 minute until fragrant.
- Add onion, red bell pepper, and yellow bell pepper. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- Add the eggplant cubes and continue stir-frying for another 5-6 minutes until the eggplant is cooked through.
- Pour the prepared sauce over the vegetables and toss to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
