Enlightened Eggplant Stir-fry

Ingredients

  • 2 medium eggplants, cut into cubes
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Prepare the sauce by mixing soy sauce, rice vinegar, sesame oil, and cornstarch in a bowl. Set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add garlic and ginger, and stir-fry for 1 minute until fragrant.
  4. Add onion, red bell pepper, and yellow bell pepper. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
  5. Add the eggplant cubes and continue stir-frying for another 5-6 minutes until the eggplant is cooked through.
  6. Pour the prepared sauce over the vegetables and toss to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve hot.
