Ingredients

  • 12 spring roll wrappers
  • 1 cup shredded lettuce
  • 1 cup julienned carrots
  • 1 cup julienned cucumber
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1 cup cooked vermicelli noodles
  • Warm water for soaking wrappers

Instructions

  1. Prepare all the vegetables and herbs, and cook the vermicelli noodles according to the package instructions.
  2. Fill a large bowl with warm water. Dip one spring roll wrapper into the water for 2-3 seconds to soften.
  3. Place the softened wrapper on a clean, damp kitchen towel.
  4. Arrange a small handful of lettuce, carrots, cucumber, mint, cilantro, and vermicelli noodles in the center of the wrapper.
  5. Roll up the wrapper, tucking in the sides as you go, to form a tight cylinder.
  6. Repeat with the remaining wrappers and filling ingredients.
  7. Serve the spring rolls with a dipping sauce of your choice.
