Enlightened Spring Rolls
Enlightened Spring Rolls are a delightful and healthy dish from Chinese Buddhist Cuisine. These light and refreshing spring rolls are filled with a colorful array of fresh vegetables and served with a flavorful dipping sauce.
Ingredients
- 12 spring roll wrappers
- 1 cup shredded lettuce
- 1 cup julienned carrots
- 1 cup julienned cucumber
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 cup cooked vermicelli noodles
- Warm water for soaking wrappers
Instructions
- Prepare all the vegetables and herbs, and cook the vermicelli noodles according to the package instructions.
- Fill a large bowl with warm water. Dip one spring roll wrapper into the water for 2-3 seconds to soften.
- Place the softened wrapper on a clean, damp kitchen towel.
- Arrange a small handful of lettuce, carrots, cucumber, mint, cilantro, and vermicelli noodles in the center of the wrapper.
- Roll up the wrapper, tucking in the sides as you go, to form a tight cylinder.
- Repeat with the remaining wrappers and filling ingredients.
- Serve the spring rolls with a dipping sauce of your choice.
