Enlightened Sweet And Sour Tofu

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 1/4 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup pineapple chunks
  • 1/4 cup rice vinegar
  • 3 tablespoons soy sauce
  • 3 tablespoons ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water
  • Salt to taste

Instructions

  1. In a bowl, toss the tofu cubes with cornstarch until evenly coated.
  2. Heat the vegetable oil in a large pan over medium heat. Add the coated tofu cubes and cook until crispy and golden brown. Remove from the pan and set aside.
  3. In the same pan, add the bell pepper, onion, and pineapple. Cook for 5 minutes until slightly softened.
  4. In a small bowl, mix together the rice vinegar, soy sauce, ketchup, brown sugar, and cornstarch mixture. Pour the sauce into the pan with the vegetables and bring to a simmer.
  5. Add the crispy tofu back into the pan and stir until the sauce thickens and coats the tofu and vegetables. Season with salt to taste.
