Enlightened Sweet And Sour Tofu

Ingredients
- 1 block of firm tofu, drained and cubed
- 1/4 cup cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, diced
- 1 onion, diced
- 1 cup pineapple chunks
- 1/4 cup rice vinegar
- 3 tablespoons soy sauce
- 3 tablespoons ketchup
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
- Salt to taste
Instructions
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat the vegetable oil in a large pan over medium heat. Add the coated tofu cubes and cook until crispy and golden brown. Remove from the pan and set aside.
- In the same pan, add the bell pepper, onion, and pineapple. Cook for 5 minutes until slightly softened.
- In a small bowl, mix together the rice vinegar, soy sauce, ketchup, brown sugar, and cornstarch mixture. Pour the sauce into the pan with the vegetables and bring to a simmer.
- Add the crispy tofu back into the pan and stir until the sauce thickens and coats the tofu and vegetables. Season with salt to taste.
