Enlightened Vegetable Dumplings

Ingredients

  • 2 cups finely chopped cabbage
  • 1 cup shredded carrots
  • 1 cup chopped mushrooms
  • 1/2 cup chopped water chestnuts
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon black pepper
  • 1 package round dumpling wrappers

Instructions

  1. In a large bowl, combine the cabbage, carrots, mushrooms, water chestnuts, garlic, ginger, soy sauce, sesame oil, and black pepper. Mix well.
  2. Place a small spoonful of the vegetable mixture in the center of a dumpling wrapper. Moisten the edges with water, then fold the wrapper in half and press to seal.
  3. Repeat with the remaining wrappers and filling.
  4. Heat a large non-stick skillet over medium heat. Add a single layer of dumplings and cook until the bottoms are golden brown, about 2-3 minutes.
  5. Add 1/2 cup of water to the skillet and cover immediately to steam the dumplings for about 5 minutes, or until the wrappers are translucent and the filling is cooked through.
  6. Remove the cover and continue cooking for another 1-2 minutes to crisp up the bottoms.
  7. Transfer the dumplings to a serving plate and serve with soy sauce or your favorite dipping sauce.
