Ennai Kathirikkai, also known as Stuffed Brinjal Curry, is a traditional South Indian dish that is bursting with flavors. This dish is made by stuffing baby brinjals with a spicy and tangy masala, and then cooking them in a rich and aromatic gravy.

Ennai Kathirikkai (stuffed Brinjal Curry)

Ingredients

  • 10-12 baby brinjals
  • 1 cup roasted peanuts
  • 1/2 cup grated coconut
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1 tablespoon tamarind paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 sprig curry leaves
  • 4 tablespoons oil
  • Salt to taste

Instructions

  1. Wash and slit the brinjals vertically, keeping the stems intact.
  2. Grind the roasted peanuts and grated coconut to a coarse paste.
  3. Stuff the ground paste into the slit brinjals and set aside.
  4. Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.
  5. Add chopped onions and sauté until golden brown.
  6. Now add the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates.
  7. Add the stuffed brinjals and tamarind paste. Mix gently and cook covered on low heat until the brinjals are tender.
  8. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
