Ennai Kathirikkai (stuffed Brinjal Curry)
Ennai Kathirikkai, also known as Stuffed Brinjal Curry, is a traditional South Indian dish that is bursting with flavors. This dish is made by stuffing baby brinjals with a spicy and tangy masala, and then cooking them in a rich and aromatic gravy.
Ingredients
- 10-12 baby brinjals
- 1 cup roasted peanuts
- 1/2 cup grated coconut
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1 tablespoon tamarind paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 tablespoon coriander powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 sprig curry leaves
- 4 tablespoons oil
- Salt to taste
Instructions
- Wash and slit the brinjals vertically, keeping the stems intact.
- Grind the roasted peanuts and grated coconut to a coarse paste.
- Stuff the ground paste into the slit brinjals and set aside.
- Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.
- Add chopped onions and sauté until golden brown.
- Now add the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates.
- Add the stuffed brinjals and tamarind paste. Mix gently and cook covered on low heat until the brinjals are tender.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
