Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup extra virgin olive oil
Instructions
- In a bowl, combine the orange juice, lime juice, garlic, cumin, oregano, salt, and pepper. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for 5 minutes before slicing.
- In a large bowl, toss the salad greens, red onion, and avocado with the extra virgin olive oil. Divide the salad mixture among 4 plates.
- Top each plate with sliced grilled chicken and drizzle with any remaining marinade. Serve immediately.
