Ingredients

  • 1 cup quinoa, rinsed

  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions

Instructions

  1. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
  2. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and black pepper to make the dressing.
  3. In a large bowl, combine the cooked quinoa, red bell pepper, cucumber, cherry tomatoes, parsley, and green onions.
  4. Pour the dressing over the quinoa mixture and toss to coat evenly.
  5. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
