Ingredients
- 1 cup quinoa, rinsed
- 1 3/4 cups water
- 1/4 cup extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
Instructions
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
- In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and black pepper to make the dressing.
- In a large bowl, combine the cooked quinoa, red bell pepper, cucumber, cherry tomatoes, parsley, and green onions.
- Pour the dressing over the quinoa mixture and toss to coat evenly.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld.
