Ensalada De Quinoa Tropical (tropical Quinoa Salad)
This Ensalada de Quinoa Tropical (Tropical Quinoa Salad) is a refreshing and nutritious dish that combines the flavors of Nicaragua with tropical fruits and quinoa.
Ingredients
- 1 cup quinoa, rinsed
- 1 3/4 cups water
- 1/2 teaspoon salt
- 1 cup diced mango
- 1 cup diced pineapple
- 1/2 cup diced red bell pepper
- 1/4 cup chopped cilantro
- 1/4 cup chopped red onion
- 1/4 cup lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring the quinoa, water, and salt to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes. Fluff with a fork and let it cool.
- In a large bowl, combine the cooked quinoa, mango, pineapple, red bell pepper, cilantro, and red onion.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour over the quinoa mixture and toss to coat evenly.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld.
