Ingredients

  • 1 cup quinoa, rinsed
  • 1 3/4 cups water
  • 1/2 teaspoon salt
  • 1 cup diced mango
  • 1 cup diced pineapple
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped red onion
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring the quinoa, water, and salt to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes. Fluff with a fork and let it cool.
  2. In a large bowl, combine the cooked quinoa, mango, pineapple, red bell pepper, cilantro, and red onion.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour over the quinoa mixture and toss to coat evenly.
  4. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
