Ingredients
- 500g beef, cut into cubes
- 1 small pumpkin, peeled and diced
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 bay leaves
- 1 tsp paprika
- 1 tsp cumin
- 4 cups beef broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the beef cubes to the pot and brown on all sides.
- Stir in the diced tomatoes, paprika, cumin, bay leaves, and season with salt and pepper.
- Pour in the beef broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 1.5 hours.
- Add the diced pumpkin to the stew and continue to simmer for another 30 minutes, or until the beef is tender and the pumpkin is cooked through.
