Ensopado De Carne Com Batata (beef And Potato Stew)
Ensopado de Carne com Batata, or Beef and Potato Stew, is a traditional dish from East Timor that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 500g beef, cubed
- 4 potatoes, peeled and cubed
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 1 bay leaf
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups beef broth
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onions and garlic, and cook until softened.
- Add the beef cubes and brown on all sides.
- Stir in the paprika, cumin, salt, and black pepper.
- Add the tomatoes, carrots, potatoes, and bay leaf. Pour in the beef broth.
- Bring the stew to a boil, then reduce the heat and simmer for 1 hour, or until the beef is tender and the potatoes are cooked through.
- Adjust the seasoning if needed, then serve hot.
