Ingredients

  • 500g beef, cubed
  • 4 potatoes, peeled and cubed
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the paprika, cumin, salt, and black pepper.
  5. Add the tomatoes, carrots, potatoes, and bay leaf. Pour in the beef broth.
  6. Bring the stew to a boil, then reduce the heat and simmer for 1 hour, or until the beef is tender and the potatoes are cooked through.
  7. Adjust the seasoning if needed, then serve hot.
