Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 4 cups beef broth
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 cups water
  • Juice of 1 lemon

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until the onions are soft and translucent.
  2. Add the beef stew meat to the pot and brown on all sides.
  3. Stir in the cumin, paprika, turmeric, and cayenne pepper, coating the meat evenly with the spices.
  4. Pour in the beef broth and water, then add the diced tomatoes, carrots, and potatoes. Season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the beef is tender.
  6. Stir in the lemon juice before serving.
