Ingredients
- 1.5 lbs beef stew meat, cubed
- 2 onions, finely chopped
- 3 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 4 cups beef broth
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- 4 cups water
- Juice of 1 lemon
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until the onions are soft and translucent.
- Add the beef stew meat to the pot and brown on all sides.
- Stir in the cumin, paprika, turmeric, and cayenne pepper, coating the meat evenly with the spices.
- Pour in the beef broth and water, then add the diced tomatoes, carrots, and potatoes. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the beef is tender.
- Stir in the lemon juice before serving.
