Eritrean Beef Stew (tsebhi Sga)

Ingredients

  • 1.5 lbs beef, cubed
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 tbsp berbere spice mix
  • 1 tsp ground cumin
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 2 cups water

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and sauté until golden brown.
  2. Add the garlic, tomatoes, berbere spice mix, cumin, cardamom, and cloves. Cook for 5 minutes, stirring occasionally.
  3. Add the beef cubes to the pot and season with salt and pepper. Cook for 10 minutes, stirring occasionally.
  4. Pour in the water, bring to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender.
  5. Adjust the seasoning if needed and serve the Eritrean Beef Stew hot with injera or rice.
