Eritrean Style Beef Curry (Tibsi Firfir Be'siga)

Ingredients

  • 1 lb beef, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tbsp berbere spice mix
  • 1/4 cup olive oil
  • Salt to taste
  • 4 cups injera bread, for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic, and sauté until the onions are soft and translucent.
  3. Add the beef cubes and berbere spice mix, and cook until the beef is browned on all sides.
  4. Stir in the diced tomatoes and season with salt. Cover the pot and let the curry simmer for 1 hour, stirring occasionally.
  5. Once the beef is tender and the sauce has thickened, remove from heat.
  6. Serve the Tibsi Firfir Be'siga hot, accompanied by injera bread.
