Ingredients
- 1 lb beef, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 2 tbsp berbere spice mix
- 1/4 cup olive oil
- Salt to taste
- 4 cups injera bread, for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic, and sauté until the onions are soft and translucent.
- Add the beef cubes and berbere spice mix, and cook until the beef is browned on all sides.
- Stir in the diced tomatoes and season with salt. Cover the pot and let the curry simmer for 1 hour, stirring occasionally.
- Once the beef is tender and the sauce has thickened, remove from heat.
- Serve the Tibsi Firfir Be'siga hot, accompanied by injera bread.
