Eritrean Style Chicken Stir-Fry (Doro Firfir Be'ingudai)
Doro Firfir Be'ingudai is a delicious Eritrean chicken stir-fry dish that is packed with flavor and perfect for a quick and easy meal. This recipe combines tender chicken, aromatic spices, and fresh vegetables for a satisfying and nutritious dish.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into strips
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon berbere spice mix
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced
- Salt and pepper to taste
- 4-6 injera bread, for serving
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Heat the remaining olive oil in the same skillet and add the onion, garlic, ginger, and berbere spice mix. Cook for 2-3 minutes until the onions are softened and the spices are fragrant.
- Add the bell pepper and mushrooms to the skillet and cook for an additional 3-4 minutes, until the vegetables are tender.
- Return the cooked chicken to the skillet and toss to combine with the vegetables. Season with salt and pepper to taste.
- Serve the Doro Firfir Be'ingudai over injera bread and enjoy!
