Eritrean Style Chicken Stir-Fry (Doro Firfir Be'ingudai)

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into strips
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon berbere spice mix
  • 1 bell pepper, sliced
  • 1 cup mushrooms, sliced
  • Salt and pepper to taste
  • 4-6 injera bread, for serving

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Heat the remaining olive oil in the same skillet and add the onion, garlic, ginger, and berbere spice mix. Cook for 2-3 minutes until the onions are softened and the spices are fragrant.
  4. Add the bell pepper and mushrooms to the skillet and cook for an additional 3-4 minutes, until the vegetables are tender.
  5. Return the cooked chicken to the skillet and toss to combine with the vegetables. Season with salt and pepper to taste.
  6. Serve the Doro Firfir Be'ingudai over injera bread and enjoy!
