Eritrean Style Fried Rice Soup (tsebhi Birsen Selatta)

Ingredients

  • 2 cups long-grain rice
  • 4 cups vegetable broth
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 1/2 cup green peas
  • 1/2 cup carrots, diced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Stir in the cumin, turmeric, and paprika, and cook for another 2 minutes to toast the spices.
  3. Add the rice to the pot and stir to coat it with the spices and oil.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let the rice simmer for 15 minutes.
  5. Stir in the green peas and diced carrots, and continue to simmer for an additional 10-15 minutes, or until the rice is cooked through and the vegetables are tender.
  6. Season the soup with salt and pepper to taste.
