Eritrean Style Fried Rice Soup (tsebhi Birsen Selatta)
Eritrean Style Fried Rice Soup, also known as Tsebhi Birsen Selatta, is a flavorful and comforting dish that combines the rich flavors of Eritrean cuisine with the heartiness of a warm soup.
Ingredients
- 2 cups long-grain rice
- 4 cups vegetable broth
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 tsp paprika
- 1/2 cup green peas
- 1/2 cup carrots, diced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the cumin, turmeric, and paprika, and cook for another 2 minutes to toast the spices.
- Add the rice to the pot and stir to coat it with the spices and oil.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let the rice simmer for 15 minutes.
- Stir in the green peas and diced carrots, and continue to simmer for an additional 10-15 minutes, or until the rice is cooked through and the vegetables are tender.
- Season the soup with salt and pepper to taste.
