Eritrean Style Lamb Tacos (Ziginiya Be'firfir)
Ziginiya Be'firfir is a delicious Eritrean dish that combines tender lamb with flavorful spices, all wrapped in soft tortillas to create a unique fusion of Eritrean and Mexican flavors.
Ingredients
- 1 lb lamb, cut into small pieces
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tomatoes, diced
- 1 jalapeño, finely chopped
- 1 tsp berbere spice mix
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 cup olive oil
- Salt to taste
- 4 large tortillas
Instructions
- In a large pan, heat the olive oil over medium heat.
- Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the lamb pieces and cook until browned on all sides.
- Stir in the berbere spice mix, cumin, paprika, and salt, and cook for another 5 minutes.
- Add the tomatoes and jalapeño, and simmer for 30-40 minutes until the lamb is tender.
- Warm the tortillas in a dry skillet or over an open flame.
- Divide the lamb mixture among the tortillas and serve immediately.
