Eritrean Style Lamb Tacos (Ziginiya Be'firfir)

Ingredients

  • 1 lb lamb, cut into small pieces
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tomatoes, diced
  • 1 jalapeño, finely chopped
  • 1 tsp berbere spice mix
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 cup olive oil
  • Salt to taste
  • 4 large tortillas

Instructions

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  3. Add the lamb pieces and cook until browned on all sides.
  4. Stir in the berbere spice mix, cumin, paprika, and salt, and cook for another 5 minutes.
  5. Add the tomatoes and jalapeño, and simmer for 30-40 minutes until the lamb is tender.
  6. Warm the tortillas in a dry skillet or over an open flame.
  7. Divide the lamb mixture among the tortillas and serve immediately.
