Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1/4 cup berbere spice
- 1/4 cup tomato paste
- 1 cup beef broth
- 2 cups chopped collard greens
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large bowl, combine the ground beef, chopped onion, minced garlic, minced ginger, and berbere spice. Mix well and form the mixture into small meatballs.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
