Eru, also known as Bitterleaf Salad, is a traditional Cameroonian dish made with bitterleaf and other flavorful ingredients. This refreshing salad is packed with nutrients and is a perfect addition to any meal.
Ingredients
- 2 cups chopped bitterleaf
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup ground crayfish
- 1/4 cup palm oil
- Salt and pepper to taste
Instructions
- Wash the bitterleaf thoroughly to remove the bitterness.
- In a pot, sauté the onions in palm oil until translucent.
- Add the tomatoes and cook until softened.
- Stir in the chopped bitterleaf and cook for 5 minutes.
- Add the ground crayfish, salt, and pepper. Mix well.
- Remove from heat and let it cool before serving.
