Eru Soup (fish Pepper Soup)
Eru Soup, also known as Fish Pepper Soup, is a traditional Cameroonian dish that is both flavorful and comforting. This spicy and aromatic soup is perfect for warming up on a chilly day or for enjoying with family and friends.
Ingredients
- 1 lb fish, cut into pieces
- 2 cups chopped spinach
- 1 cup chopped waterleaf
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 tbsp ground crayfish
- 2 tbsp pepper soup spice mix
- 2 scotch bonnet peppers, chopped
- 4 cups fish or vegetable stock
- Salt to taste
Instructions
- Season the fish with salt and set aside.
- In a large pot, bring the stock to a boil over medium heat.
- Add the onions, tomatoes, pepper soup spice mix, and ground crayfish to the pot.
- Add the seasoned fish and scotch bonnet peppers to the pot.
- Cover the pot and let the soup simmer for 30 minutes.
- Add the chopped spinach and waterleaf to the pot and cook for an additional 10 minutes.
- Adjust the seasoning with salt if needed.
- Serve the Eru Soup hot and enjoy!
