Eru Soup (fish Pepper Soup)

Ingredients

  • 1 lb fish, cut into pieces
  • 2 cups chopped spinach
  • 1 cup chopped waterleaf
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 tbsp ground crayfish
  • 2 tbsp pepper soup spice mix
  • 2 scotch bonnet peppers, chopped
  • 4 cups fish or vegetable stock
  • Salt to taste

Instructions

  1. Season the fish with salt and set aside.
  2. In a large pot, bring the stock to a boil over medium heat.
  3. Add the onions, tomatoes, pepper soup spice mix, and ground crayfish to the pot.
  4. Add the seasoned fish and scotch bonnet peppers to the pot.
  5. Cover the pot and let the soup simmer for 30 minutes.
  6. Add the chopped spinach and waterleaf to the pot and cook for an additional 10 minutes.
  7. Adjust the seasoning with salt if needed.
  8. Serve the Eru Soup hot and enjoy!
