Erwtensoep (dutch Split Pea Soup)
Erwtensoep, or Dutch split pea soup, is a hearty and comforting dish that is perfect for the cold winter months. This traditional Dutch soup is packed with flavor and is a great way to warm up on a chilly day.
Ingredients
- 1 lb dried split peas
- 1 smoked ham hock
- 2 onions, chopped
- 3 carrots, diced
- 3 celery stalks, diced
- 2 potatoes, diced
- 1 leek, sliced
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Rinse the split peas and place them in a large pot with the ham hock.
- Add enough water to cover the peas and ham hock, then bring to a boil.
- Reduce the heat and simmer for 1 hour, skimming off any foam that rises to the surface.
- Add the onions, carrots, celery, potatoes, leek, bay leaves, and thyme to the pot.
- Continue to simmer for another hour, or until the peas and vegetables are soft.
- Remove the ham hock from the pot and shred the meat, then return the meat to the soup.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
