Erwtensoep (dutch Split Pea Soup)

Ingredients

  • 1 lb dried split peas
  • 1 smoked ham hock
  • 2 onions, chopped
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 2 potatoes, diced
  • 1 leek, sliced
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas and place them in a large pot with the ham hock.
  2. Add enough water to cover the peas and ham hock, then bring to a boil.
  3. Reduce the heat and simmer for 1 hour, skimming off any foam that rises to the surface.
  4. Add the onions, carrots, celery, potatoes, leek, bay leaves, and thyme to the pot.
  5. Continue to simmer for another hour, or until the peas and vegetables are soft.
  6. Remove the ham hock from the pot and shred the meat, then return the meat to the soup.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
