Ingredients

  • 1 whole fish, cleaned and scaled
  • 1 cup cornstarch
  • 1 cup cooking oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large carrot, julienned
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup vinegar
  • 1/2 cup sugar
  • 1/4 cup soy sauce
  • 1 cup water
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water
  • Salt and pepper to taste

Instructions

  1. Pat the fish dry with paper towels and coat with cornstarch.
  2. Heat the cooking oil in a pan over medium heat and fry the fish until crispy and golden brown. Set aside on a plate lined with paper towels to drain excess oil.
  3. In a separate pan, sauté the garlic and onion until fragrant.
  4. Add the bell peppers and carrot, and cook until slightly tender.
  5. Pour in the vinegar, sugar, soy sauce, and water. Bring to a simmer.
  6. Season with salt and pepper, then add the dissolved cornstarch to thicken the sauce.
  7. Place the fried fish on a serving platter and pour the sweet and sour sauce over it.
  8. Serve hot and enjoy!
