Instructions

  1. Preheat the grill to medium-high heat.
  2. Place the whole bell peppers, eggplants, onions, and tomatoes on the grill. Cook, turning occasionally, until the vegetables are charred and tender, about 20-30 minutes.
  3. Remove the vegetables from the grill and let them cool slightly.
  4. Peel the skin off the bell peppers and tomatoes, then remove the seeds from the peppers.
  5. Slice the vegetables into long strips and arrange them on a serving platter.
  6. Drizzle with olive oil, sprinkle with salt and pepper, and garnish with minced garlic.
