Ingredients

  • 1 1/2 lbs boneless lamb, cut into 1-inch cubes
  • 1 red onion, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the olive oil, minced garlic, paprika, cumin, coriander, cinnamon, salt, and pepper. Mix well to create the marinade.
  2. Add the lamb cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated lamb, red onion, and green bell pepper onto skewers, alternating the ingredients.
  4. Grill the kebabs for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness and the vegetables are tender and slightly charred.
  5. Remove the kebabs from the grill and let them rest for a few minutes before serving.
