Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup (60ml) coconut milk
- 2 tablespoons (30ml) soy sauce
- 2 tablespoons (30ml) fish sauce
- 2 tablespoons (30ml) brown sugar
- 2 cloves garlic, minced
- 1 teaspoon (5g) ground turmeric
- 1 teaspoon (5g) ground coriander
- 1 teaspoon (5g) ground cumin
- 1/2 teaspoon (2g) ground white pepper
- 1/4 teaspoon (1g) cayenne pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the coconut milk, soy sauce, fish sauce, brown sugar, garlic, turmeric, coriander, cumin, white pepper, and cayenne pepper. Mix well to create the marinade.
- Add the chicken cubes to the marinade and toss to coat. Cover the bowl and marinate in the refrigerator for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked wooden skewers.
- Grill the skewers for 3-4 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
