Ingredients

Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.

- Stir in the chickpeas, diced tomatoes, and vegetable broth. Simmer for 15 minutes.
- Add the spinach to the pot and cook until wilted, about 3-5 minutes.
- Season with salt and pepper to taste. Serve hot.
