Estofado de Cabra Canario, or Canarian Goat Stew, is a traditional dish from the Canary Islands known for its rich and hearty flavors. This slow-cooked stew is a perfect comfort food for a cozy family meal.
Ingredients
- 2 lbs goat meat, cut into chunks
- 3 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp thyme
- 2 bay leaves
- Salt and pepper to taste
- 1 cup red wine
- 2 cups beef broth
- 2 large potatoes, peeled and diced
Instructions
- Season the goat meat with salt, pepper, paprika, and cumin.
- Heat olive oil in a large pot over medium heat. Brown the goat meat in batches and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the tomatoes, bell peppers, thyme, and bay leaves. Cook for 5 minutes.
- Pour in the red wine and beef broth. Bring to a simmer.
- Return the browned goat meat to the pot. Cover and simmer for 1.5 hours, stirring occasionally.
- Add the diced potatoes and continue to simmer for another 30 minutes or until the meat is tender.
- Adjust seasoning with salt and pepper if needed. Serve hot.
