Ingredients

  • 1 kg beef, cut into chunks
  • 4 shallots, chopped
  • 5 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 400ml coconut milk
  • 1 cup water
  • 3 tbsp vegetable oil
  • 1 tsp tamarind paste
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the shallots and garlic, and sauté until fragrant.
  3. Add the beef chunks and cook until browned.
  4. Stir in the lemongrass, kaffir lime leaves, and tamarind paste.
  5. Pour in the coconut milk and water, then season with salt.
  6. Simmer over low heat for 2 hours, stirring occasionally, until the beef is tender and the sauce is thick.
  7. Serve the Estofado de Carne Rendang hot with steamed rice.
