Estofado de Carne Rendang, also known as Rendang Beef Stew, is a traditional dish from Odesite cuisine that is rich in flavor and spices. This slow-cooked stew is a perfect comfort food for a cozy night in.
Ingredients
- 1 kg beef, cut into chunks
- 4 shallots, chopped
- 5 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 400ml coconut milk
- 1 cup water
- 3 tbsp vegetable oil
- 1 tsp tamarind paste
- Salt to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the shallots and garlic, and sauté until fragrant.
- Add the beef chunks and cook until browned.
- Stir in the lemongrass, kaffir lime leaves, and tamarind paste.
- Pour in the coconut milk and water, then season with salt.
- Simmer over low heat for 2 hours, stirring occasionally, until the beef is tender and the sauce is thick.
- Serve the Estofado de Carne Rendang hot with steamed rice.
