Ingredients
- 1 whole rabbit, cut into pieces
- 2 onions, chopped
- 4 garlic cloves, minced

- 1/2 cup white wine
- 4 cups chicken broth
- 2 tablespoons olive oil

Instructions
- Season the rabbit pieces with salt, pepper, and sweet paprika.
- Heat the olive oil in a large pot over medium heat. Brown the rabbit pieces on all sides, then remove and set aside.
- In the same pot, sauté the onions, garlic, and red bell pepper until softened.
- Add the diced tomatoes, bay leaf, and white wine. Cook for a few minutes until the wine reduces slightly.
- Return the rabbit pieces to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the rabbit is tender.
- Adjust the seasoning with salt and pepper if needed.
