Ingredients

  • 1 whole rabbit, cut into pieces

  • 1 bay leaf
  • 1 teaspoon sweet paprika
  • 1/2 cup white wine
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Season the rabbit pieces with salt, pepper, and sweet paprika.
  2. Heat the olive oil in a large pot over medium heat. Brown the rabbit pieces on all sides, then remove and set aside.
  3. In the same pot, sauté the onions, garlic, and red bell pepper until softened.
  4. Add the diced tomatoes, bay leaf, and white wine. Cook for a few minutes until the wine reduces slightly.
  5. Return the rabbit pieces to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the rabbit is tender.
  6. Adjust the seasoning with salt and pepper if needed.
