Ingredients

  • 2 lbs lamb shoulder, cut into chunks

  • 1 red bell pepper, sliced
  • 1 cup dry white wine
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1 tsp paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Season the lamb chunks with salt, pepper, and paprika.
  2. Heat some olive oil in a large pot over medium-high heat. Brown the lamb chunks on all sides. Remove and set aside.
  3. In the same pot, add the onions and garlic. Cook until softened.
  4. Add the carrots, potatoes, and red bell pepper. Cook for a few minutes.
  5. Pour in the white wine and let it reduce slightly.
  6. Return the lamb to the pot. Add the bay leaves and chicken or vegetable broth. Bring to a simmer.
  7. Cover and cook for about 2 hours, or until the lamb is tender.
  8. Adjust the seasoning with salt and pepper if needed.
