Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 large carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, sliced
- 1 cup dry white wine
- 4 cups chicken or vegetable broth
- 2 bay leaves
- 1 tsp paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Season the lamb chunks with salt, pepper, and paprika.
- Heat some olive oil in a large pot over medium-high heat. Brown the lamb chunks on all sides. Remove and set aside.
- In the same pot, add the onions and garlic. Cook until softened.
- Add the carrots, potatoes, and red bell pepper. Cook for a few minutes.
- Pour in the white wine and let it reduce slightly.
- Return the lamb to the pot. Add the bay leaves and chicken or vegetable broth. Bring to a simmer.
- Cover and cook for about 2 hours, or until the lamb is tender.
- Adjust the seasoning with salt and pepper if needed.
- Serve the estofado de cordero a la Gallega hot, garnished with chopped fresh parsley.
