Estofado De Ixim (ixim Stew)
Estofado de Ixim, also known as Ixim Stew, is a traditional dish from Guatemalan cuisine that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 2 lbs of chicken, cut into pieces
- 2 cups of corn kernels
- 1 onion, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1 bell pepper, sliced
- 1/2 cup of green beans, chopped
- 1/4 cup of cilantro, chopped
- 4 cups of chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the chicken pieces and cook until browned on all sides.
- Add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
- Stir in the tomatoes, corn, and green beans. Cook for a few minutes.
- Pour in the chicken broth and bring to a simmer. Season with salt and pepper.
- Cover and let it simmer for about 1 hour, or until the chicken is cooked through and the flavors have melded together.
- Stir in the cilantro just before serving.
