Estofado De Ixim (ixim Stew)

Ingredients

  • 2 lbs of chicken, cut into pieces
  • 2 cups of corn kernels
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1/2 cup of green beans, chopped
  • 1/4 cup of cilantro, chopped
  • 4 cups of chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides.
  3. Add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
  4. Stir in the tomatoes, corn, and green beans. Cook for a few minutes.
  5. Pour in the chicken broth and bring to a simmer. Season with salt and pepper.
  6. Cover and let it simmer for about 1 hour, or until the chicken is cooked through and the flavors have melded together.
  7. Stir in the cilantro just before serving.
