Ingredients
- 2 lbs beef stew meat, cut into chunks
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 2 carrots, sliced
- 2 potatoes, peeled and cubed
- 4 cups beef broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the beef stew meat and brown on all sides. Remove the meat and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the tomatoes, bell pepper, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.
- Return the beef to the pot and pour in the beef broth. Season with cumin, paprika, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- Stir in the chopped cilantro before serving.
