Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 red bell pepper, sliced
  • 2 carrots, sliced
  • 2 potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the beef stew meat and brown on all sides. Remove the meat and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Add the tomatoes, bell pepper, carrots, and potatoes. Cook for 5 minutes, stirring occasionally.
  5. Return the beef to the pot and pour in the beef broth. Season with cumin, paprika, salt, and pepper.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Stir in the chopped cilantro before serving.
