Ingredients
- 2 lbs beef stew meat, cubed
- 3 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 large carrots, sliced
- 2 potatoes, peeled and diced
- 1 red bell pepper, chopped
- 1 can (14 oz) crushed tomatoes
- 2 cups beef broth
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- Season the beef stew meat with salt, pepper, paprika, and cumin.
- Heat olive oil in a large pot over medium heat. Add the seasoned beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
- Add the carrots, potatoes, and red bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.
- Pour in the crushed tomatoes and beef broth. Stir to combine.
- Return the browned beef to the pot. Bring the stew to a simmer, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beef is tender.
- Adjust the seasoning with salt and pepper if needed. Serve the Canarian Style Beef Stew hot and enjoy!
