Estofado De Ternera A La Gallega (galician Style Beef Stew)
Estofado de Ternera a la Gallega, or Galician Style Beef Stew, is a traditional dish from the Galicia region of Spain. This hearty and flavorful stew is perfect for a cozy family meal, especially during the colder months.
Ingredients
- 2 lbs beef chuck, cut into cubes
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, chopped
- 1 cup red wine
- 2 cups beef broth
- 2 bay leaves
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season the beef with salt, pepper, and paprika.
- Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
- Lower the heat to medium and add the onions, garlic, carrots, and bell pepper to the pot. Cook until the vegetables are softened.
- Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for 5 minutes.
- Return the beef to the pot and add the potatoes, beef broth, and bay leaves. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
- Adjust the seasoning with salt and pepper, if needed. Serve the estofado de ternera hot and enjoy!
