Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 red bell pepper, chopped
  • 1 cup red wine
  • 2 cups beef broth
  • 2 bay leaves
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the beef with salt, pepper, and paprika.
  2. Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
  3. Lower the heat to medium and add the onions, garlic, carrots, and bell pepper to the pot. Cook until the vegetables are softened.
  4. Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for 5 minutes.
  5. Return the beef to the pot and add the potatoes, beef broth, and bay leaves. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
  6. Adjust the seasoning with salt and pepper, if needed. Serve the estofado de ternera hot and enjoy!
