Ingredients

  • 1.5 lbs beef stew meat, cut into chunks
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 4 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 red bell pepper, diced
  • 1 cup beef broth
  • 1/2 cup red wine
  • 2 bay leaves
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the beef chunks with salt, pepper, and paprika.
  2. Heat the olive oil in a large pot over medium-high heat. Brown the beef chunks on all sides, then remove and set aside.
  3. Add the onions, carrots, and bell pepper to the pot. Cook until the vegetables are softened.
  4. Stir in the garlic and cook for another minute.
  5. Return the beef to the pot and add the tomatoes, potatoes, beef broth, red wine, and bay leaves.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender.
  7. Season with additional salt and pepper if needed.
  8. Discard the bay leaves before serving.
