Estofado De Ternera (bullring Beef Stew)
Estofado de Ternera, or Bullring Beef Stew, is a traditional dish from Madrid cuisine that is hearty, flavorful, and perfect for a cozy meal on a chilly day.
Ingredients
- 1.5 lbs beef stew meat, cut into chunks
- 2 onions, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 4 garlic cloves, minced
- 2 tomatoes, chopped
- 1 red bell pepper, diced
- 1 cup beef broth
- 1/2 cup red wine
- 2 bay leaves
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season the beef chunks with salt, pepper, and paprika.
- Heat the olive oil in a large pot over medium-high heat. Brown the beef chunks on all sides, then remove and set aside.
- Add the onions, carrots, and bell pepper to the pot. Cook until the vegetables are softened.
- Stir in the garlic and cook for another minute.
- Return the beef to the pot and add the tomatoes, potatoes, beef broth, red wine, and bay leaves.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender.
- Season with additional salt and pepper if needed.
- Discard the bay leaves before serving.
