  • 2 carrots, diced
  • 2 tomatoes, chopped
  • 1 bay leaf
  • 1 tsp sweet paprika
  • 1/2 tsp ground cumin
  • 1/2 cup white wine
  • 4 cups beef broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the veal and brown on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onions, garlic, and carrots. Cook until softened.
  4. Stir in the mushrooms, tomatoes, bay leaf, paprika, and cumin. Cook for 5 minutes.
  5. Pour in the white wine and simmer for 2 minutes.
  6. Return the veal to the pot and add the beef broth. Season with salt and pepper.
  7. Cover and simmer for 1.5 to 2 hours, or until the veal is tender.
  8. Adjust seasoning if needed and serve hot.
