- 1/2 cup white wine
- 4 cups beef broth

Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the veal and brown on all sides. Remove from the pot and set aside.
- In the same pot, add the onions, garlic, and carrots. Cook until softened.
- Stir in the mushrooms, tomatoes, bay leaf, paprika, and cumin. Cook for 5 minutes.
- Pour in the white wine and simmer for 2 minutes.
- Return the veal to the pot and add the beef broth. Season with salt and pepper.
- Cover and simmer for 1.5 to 2 hours, or until the veal is tender.
