Estonian Mushroom and Potato Gratin (Eesti seenemütsi ja kartuligratiin)

Ingredients

  • 500g potatoes, thinly sliced
  • 300g mixed mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 200ml heavy cream
  • 100g grated cheese
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Grease a baking dish with butter.
  3. Layer half of the sliced potatoes in the bottom of the dish.
  4. In a pan, sauté the onions and garlic in butter until softened.
  5. Add the mushrooms and cook until they release their moisture.
  6. Season with salt and pepper.
  7. Spread the mushroom mixture over the potatoes in the baking dish.
  8. Layer the remaining sliced potatoes on top.
  9. Pour the heavy cream over the potatoes.
  10. Sprinkle the grated cheese on top.
  11. Cover the dish with foil and bake for 45 minutes.
  12. Remove the foil and bake for an additional 15 minutes until the top is golden and bubbly.
  13. Let it cool for a few minutes before serving.
