Estonian Mushroom and Potato Gratin (Eesti seenemütsi ja kartuligratiin)
Eesti seenemütsi ja kartuligratiin, or Estonian Mushroom and Potato Gratin, is a comforting and hearty dish that is perfect for a cozy Baltic cuisine-inspired meal.
Ingredients
- 500g potatoes, thinly sliced
- 300g mixed mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 200ml heavy cream
- 100g grated cheese
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Grease a baking dish with butter.
- Layer half of the sliced potatoes in the bottom of the dish.
- In a pan, sauté the onions and garlic in butter until softened.
- Add the mushrooms and cook until they release their moisture.
- Season with salt and pepper.
- Spread the mushroom mixture over the potatoes in the baking dish.
- Layer the remaining sliced potatoes on top.
- Pour the heavy cream over the potatoes.
- Sprinkle the grated cheese on top.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
