Ingredients

- 4 cups vegetable broth

Instructions
- In a large pot, bring the vegetable broth to a simmer.

- Add the pearl barley to the pan with the onions and garlic. Stir to coat the barley with the butter and cook for 2-3 minutes.

- Pour in the white wine and cook until it has been absorbed by the barley and mushrooms.
- Begin adding the hot vegetable broth to the barley mixture, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- Continue adding broth and stirring until the barley is tender and creamy, about 30-35 minutes.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Serve the Estonian-style barley risotto with a sprinkle of fresh parsley on top.
