Estufado De Matapa (matapa Stew)
Estufado de Matapa, or Matapa Stew, is a traditional Mozambican dish made with cassava leaves, ground peanuts, coconut milk, and spices. This hearty stew is a staple in Mozambican cuisine and is packed with flavor and nutrients.
Ingredients
- 500g cassava leaves, finely chopped
- 1 cup ground peanuts
- 400ml coconut milk
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp ground coriander
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 cups water
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until the onions are soft and translucent.
- Add the diced tomatoes, ground peanuts, paprika, ground coriander, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Stir in the cassava leaves and water. Cover the pot and simmer for 40 minutes, stirring occasionally.
- Pour in the coconut milk and continue to simmer for an additional 15 minutes, or until the stew thickens.
- Adjust seasoning to taste and serve hot.
