Estufado De Matapa (matapa Stew)

Ingredients

  • 500g cassava leaves, finely chopped
  • 1 cup ground peanuts
  • 400ml coconut milk
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 cups water

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until the onions are soft and translucent.
  2. Add the diced tomatoes, ground peanuts, paprika, ground coriander, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  3. Stir in the cassava leaves and water. Cover the pot and simmer for 40 minutes, stirring occasionally.
  4. Pour in the coconut milk and continue to simmer for an additional 15 minutes, or until the stew thickens.
  5. Adjust seasoning to taste and serve hot.
